All you need for this recipe are chia seeds, water, and fresh lime juice. You can also use fresh lemon juice if you prefer.
How to make chia seed water
To make sure you’re well equipped with water for the day, use a 1-litre sized bottle. This size leaves a little bit of space for shaking up the chia seeds. But you can use any cup or jar, and give it a stir with a spoon or straw. Here’s how to make chia seed water in two simple steps:
- Make fresh lime juice Juice a whole lime (about 1½ tablespoons of juice) and cut another lime into slices or wedges. Use unwaxed limes if possible since the lime slices or wedges will be sitting in the water.
- Mix everything up. Place the water, chia seeds, lime juice, and lime slices into a bottle or jar, seal and shake well. Let it sit for 15 minutes to allow the seeds to gel as they absorb the water. You’ll notice that the seeds will separate to the top and bottom. But don’t worry, as you give them time to gel up, they will slowly all start to float together. Just make sure to give it a good shake or stir before drinking.
How long does chia seed water last?
You can store chia seed water in an airtight container in the fridge for up to five days if you like. Just give it a shake or stir before drinking.

Ingredients
- 1 tbsp chia seeds
- 1 unwaxed lime, sliced or cut into wedges
- 750 ml filtered water
- 1 lime, juiced
Instructions
- Place the chia seeds, lime slices, water and lime juice in a 1 litre bottle or jar. Seal and shake to mix well. Set aside for 15 minutes to allow the seeds to soak up the water. Shake again before drinking.
