Treat yourself to a batch of power-packed, easy no-bake coconut energy balls. These ball-shaped bites are crammed with goodness and provide an easy grab-and-go snack or lunchbox filler. They’re portable nuggets of energy-dense nutrition, making them perfect to fuel a workout.
No-bake coconut energy ball ingredients
Every bite is full of nutritious ingredients, so you can expect a completely natural health boost from these vitality-packed energy balls. Here’s what you need to make them:
- Pecans: The sweet, buttery flavour of pecans works so well in this recipe.
- Medjool dates: These sweeten the energy balls.
- Apple puree: You can buy apple puree, but it’s very easy (and cheaper) to make it yourself and only takes 10 minutes – see my quick method below.
- Maca powder: Maca is thought to increase strength and stamina. That’s why these bliss balls make a great snack to enjoy before a workout – the Inca warriors took maca before battle! Maca powder may also support fertility by supporting hormone regulation. Get gelatinised maca if you can, which has been lightly cooked to improve digestion. If you’ve ever felt nauseous after eating maca, it could be that you had a raw powder. Switch to gelatinised and see if it helps.
- Sea salt: Don’t leave this out – it enhances the flavours of the other ingredients.
- Milled seeds: I use a blend of milled flaxseed, sunflower and pumpkin seeds by Linwoods, they do other blends you can try as well. Or just use milled flaxseeds instead.
- Desiccated coconut: I love the subtle sweetness desiccated coconut brings to this recipe.
Mix and match
This energy ball recipe is fabulous in its own right, but feel free to experiment with your favourite flavours. If you don’t have maca powder, then try ground cinnamon instead. If you don’t like pecans switch for your favourite nut/s. Try chia seeds instead of the seed blend I’ve recommended. Have fun with the recipe!
Make your own apple puree
To make 125 g of apple puree, simply peel, core and chop two apples into chunks, place in a small saucepan with 2 tablespoons of water and simmer until soft (about 10 minutes). Then either blend or mash to a pureed consistency. Make a large batch and store in 125g (½-cup) portions in the freezer in silicone freezing trays with lids. Then you’ll have plenty ready when you want to make this recipe.
How to make no-bake coconut energy balls
Make these coconut energy balls in just three easy steps:
- Process: Place the pecans in a food processor and pulse a few times to break them up, then add the dates, apple puree, vanilla, sea salt, milled seeds and desiccated coconut and process until the mixture binds together. Refrigerate for 15 minutes to firm up. Line a baking tray with plastic-free baking parchment.
- Roll and coat: Place the desiccated coconut in a bowl. Roll tablespoons of the mixture into evenly-sized balls, then roll in the desiccated coconut to coat, and place on the prepared tray.
- Chill: Refrigerate for an hour (or overnight) to set.
That’s it! Delicious, moreish energy bites with minimal effort. As well as pre-workout fuel, they make great lunchbox fillers.
Storage
Store these coconut energy balls in an airtight container in the fridge for up to one week, or the freezer for up to one month. To stop the balls clumping together, separate them with plastic-free baking parchment before freezing.
