No-bake coconut energy balls

These delicious coconut energy balls are the perfect pre-workout snack for a boost of energy. Super easy to make, minimal fuss and no baking required.

  • Place the pecans in a food processor and pulse a few times to break them up, then add the dates, apple puree, vanilla, sea salt, milled seeds and desiccated coconut and process until the mixture binds together. Refrigerate for 15 minutes to firm up. Line a baking tray with plastic-free baking parchment.
  • Place the desiccated coconut in a bowl. Roll tablespoons of the mixture into evenly-sized balls, then roll in the desiccated coconut to coat, and place on the prepared tray.
  • Refrigerate for an hour (or overnight) to set.

Notes

  • Store these coconut energy balls in an airtight container in the fridge for up to one week, or the freezer for up to one month. To stop the balls clumping together, separate them with plastic-free baking parchment before freezing.
