Pan-fried sea bass with lime, coriander & chilli

This simple pan-fried sea bass is packed with flavour from coriander, chilli and lime. A delicious, quick and easy recipe that's perfect midweek.

Pan-fried sea bass offers a super quick and easy meal. Perfect for midweek cooking – it will become a weeknight staple. Vibrant courgette noodles make a simple, low-carb side for this flavour packed fish recipe.

Pan-fried sea bass ingredients

This simple sea bass recipe has bags of flavour, make it with just a handful of fresh ingredients. Here’s what you need:

  • Sea bass fillets: This mild, delicate fish has a meaty consistency similar to cod. Depending on your preference get skin-on or skinless – the skin will crisp up nicely during pan-frying, adding flavour and texture.
  • Olive oil, fresh lime zest and juice, red chilli and garlic: For the marinade, to infuse the sea bass with bold flavour.
  • Coriander (cilantro): For garnishing.
  • Courgette: I’m serving this sea bass with courgette noodles.

How to make pan-fried sea bass

Make this pan-fried sea bass in three simple steps:

  1. Make the marinade: Place the olive oil, lime juice and zest, chilli and garlic in a shallow bowl and whisk to combine. Add the sea bass and coat well. Set aside for 5 minutes to marinate.
  2. Pan-fry the sea bass: Heat 1 tablespoon of the olive oil in a frying pan over a medium heat. Add the sea bass and marinade, and pan-fry for 4-5 minutes each side, or until cooked through, continuously basting with the marinade.
  3. Sauté the courgette noodles: Meanwhile heat the remaining olive oil in a separate frying pan, add the courgette noodles and sauté for 1-2 minutes or until warmed through.

That’s it! Divide the courgette noodles between serving plates, top with the sea bass, drizzle with the cooking juices and sprinkle with coriander to serve.

Ingredients

  • 1 tbsp + 2 tsp olive oil
  • 2 sea bass fillets
  • 2 medium courgettes spiralised and longer strands snipped
  • Small bunch of coriander leaves finely chopped

For the chilli lime coriander marinade

  • 1 tbsp olive oil
  • Juice and zest of 1 lime
  • 1 small red chilli finely chopped
  • 2 garlic cloves crushed

Instructions

  • Place the olive oil, lime juice and zest, chilli and garlic in a shallow bowl and whisk to combine. Add the sea bass and coat well. Set aside for 5 minutes to marinate.
