This week I’ve added in a column for Sunday meal prep. The protein that you cook on Sunday (lemon and thyme roast chicken) can then be used for these meals throughout the week:

  • Dinner on Monday and Wednesday
  • Layered into a jar salad for lunch on Tuesday and Thursday

The egg muffins that you cook on Sunday will be your protein in lunch on Monday, Wednesday and Friday, which will be served alongside rainbow slaw that you make ahead of time on Sunday. This recipe is actually more delicious the longer you leave the flavours to marinate.

There’s a new recipe for almond and raspberry granola, which will be breakfast on Monday, Wednesday and Friday. You can serve this with either yoghurt or milk.

Top tip

Boost protein in your lunch on the weekend by adding collagen powder to the easy pea-sy soup.
