Sweet potato waffles

These easy homemade sweet potato waffles are crisp on the outside and fluffy on the inside. Make them in your waffle maker and serve with avocado, tomatoes and fried egg and enjoy at any time of day.

Ingredients

  • 180 g sweet potato puree
  • 1 large organic free-range egg
  • 1 large organic free-range egg yolk
  • 140 ml milk of your choice I used oat milk
  • 100 g buckwheat flour (see notes)
  • 1 tsp baking powder

To serve

  • 1 avocado mashed
  • Juice of ½ lime
  • Sea salt and cracked black pepper
  • Handful of cherry tomatoes sliced
  • 2 fried eggs (see notes)

Instructions

  • Preheat the waffle maker. Place the sweet potato puree, egg, egg yolk, oat milk, oat flour and baking powder in a blender and blend until smooth.
  • Spoon 2-3 tablespoons of batter per waffle into the waffle maker and cook until golden. Set aside and keep warm in a low oven. Repeat with the remaining batter.
  • Place the avocado, lime juice, salt and pepper in a small bowl and mash.
  • Divide the waffles and tomatoes between serving plates and top with the mashed avocado and fried eggs. Season with salt and pepper to serve.

Notes

  • If you can’t find buckwheat flour in the store, make your own.
  • Fry your eggs in avocado oil. Avoid vegetable and seed oils.
