Cauliflower rice

A perfect base for your protein of choice, cauliflower rice is an absolute nutrient powerhouse. Any excuse to get an extra helping of vegetables into a meal!

Ingredients

  • 1 tbsp olive oil
  • 1 small onion diced
  • 1 garlic clove crushed
  • Sea salt
  • 1 small head cauliflower about 300g, grated

To make spicy cauliflower rice (optional)

  • ½ tsp ground cumin
  • ½ tsp paprika
  • ¼ tsp chilli powder

Instructions

  • Heat the olive oil in a large frying pan over a medium heat. Add the onion, garlic and salt and cook for 4-5 minutes, or until soft and fragrant.
  • To make spicy cauliflower rice, add the cumin, paprika and chilli powder and cook for 1-2 minutes, or until fragrant. (For plain rice, skip this step.)
  • Add the cauliflower and cook for 5 minutes, or until softened, stirring frequently.
  • Divide between serving bowls.
