Caesar salad dressing

This Caesar dressing is dairy-free and vegan but still rich and creamy with a delicious garlicky kick. It’s easy to make and very versatile.

Ingredients

  • 60 g raw cashews soaked, drained and rinsed (see notes)
  • 2 tbsp lemon juice
  • 1 tbsp Dijon mustard
  • 1 tbsp tamari (see notes)
  • 2 tbsp extra-virgin olive oil
  • 2 garlic cloves crushed
  • 1 tbsp nutritional yeast
  • 1 tbsp balsamic vinegar
  • 60 ml filtered water

Instructions

  • Place all the ingredients in a blender and blend until completely smooth. This may take up to 5 minutes.

Notes

  • Soak the cashews in double their volume of filtered water for at least 2 hours (or overnight). If you forget to soak the cashews, use freshly boiled water and soak for at least 15 minutes. Drain and rinse thoroughly before use in this recipe.
  • Tamari is gluten-free soy sauce. Tamari contains less salt and has a stronger umami flavour, and usually contains minimal ingredients. So tamari is preferable, even if you're not avoiding gluten.
