Caesar salad dressing
This Caesar dressing is dairy-free and vegan but still rich and creamy with a delicious garlicky kick. It’s easy to make and very versatile.

- 60 g raw cashews soaked, drained and rinsed (see notes)
- 2 tbsp lemon juice
- 1 tbsp Dijon mustard
- 1 tbsp tamari (see notes)
- 2 tbsp extra-virgin olive oil
- 2 garlic cloves crushed
- 1 tbsp nutritional yeast
- 1 tbsp balsamic vinegar
- 60 ml filtered water
- Soak the cashews in double their volume of filtered water for at least 2 hours (or overnight). If you forget to soak the cashews, use freshly boiled water and soak for at least 15 minutes. Drain and rinse thoroughly before use in this recipe.
- Tamari is gluten-free soy sauce. Tamari contains less salt and has a stronger umami flavour, and usually contains minimal ingredients. So tamari is preferable, even if you're not avoiding gluten.
