Cauliflower rice

- 1 tbsp olive oil
- 1 small onion diced
- 1 garlic clove crushed
- Sea salt
- 1 small head cauliflower about 300g, grated
To make spicy cauliflower rice (optional)
- ½ tsp ground cumin
- ½ tsp paprika
- ¼ tsp chilli powder
Heat the olive oil in a large frying pan over a medium heat. Add the onion, garlic and salt and cook for 4-5 minutes, or until soft and fragrant.
To make spicy cauliflower rice, add the cumin, paprika and chilli powder and cook for 1-2 minutes, or until fragrant. (For plain rice, skip this step.)
Add the cauliflower and cook for 5 minutes, or until softened, stirring frequently.
Divide between serving bowls.
