- 1 tbsp + 2 tsp olive oil
- 2 sea bass fillets
- 2 medium courgettes spiralised and longer strands snipped
- Small bunch of coriander leaves finely chopped
For the chilli lime coriander marinade
- 1 tbsp olive oil
- Juice and zest of 1 lime
- 1 small red chilli finely chopped
- 2 garlic cloves crushed
Place the olive oil, lime juice and zest, chilli and garlic in a shallow bowl and whisk to combine. Add the sea bass and coat well. Set aside for 5 minutes to marinate.
Heat 1 tablespoon of the olive oil in a frying pan over a medium heat. Add the sea bass and marinade, and pan-fry for 4-5 minutes each side, or until cooked through, continuously basting with the marinade.
Meanwhile heat the remaining olive oil in a separate frying pan, add the courgette noodles and sauté for 1-2 minutes or until warmed through. Divide between serving plates, top with a piece of sea bass and drizzle with the cooking juices to serve.
