- 125 g frozen strawberries thawed slightly
- 125 ml filtered water
- Juice of 1 large lemon
- 45 g grass-fed gelatine
- 1 tbsp honey
Place the strawberries, water and lemon juice into a blender and blend until smooth.
Pour into a small saucepan and sprinkle the gelatine evenly over the top of the mixture and set aside for 5 minutes. It will thicken as the gelatine absorbs the liquid. Place the saucepan over a low heat, add the honey and whisk gently for 5 minutes, or until smooth and thin.
Pour the mixture into silicone square moulds, place on a baking tray and refrigerate overnight, or for at least 2 hours to firm up. Remove from the moulds and store in an airtight glass container in the fridge.
