Chocolate orange baked oats

Try a twist on your regular porridge with this healthy chocolate, almond and orange bake.

Ingredients

  • 90 g jumbo rolled oats
  • 60 g quinoa flakes
  • 40 g + 2 tbsp roasted salted almonds roughly chopped
  • 1 tbsp cacao powder sifted
  • 2 large eggs beaten
  • 250 ml milk of your choice plus extra to serve
  • 1 tbsp honey
  • ¾ tsp pure orange extract
  • Zest of half an orange plus extra to serve
  • 20 g dark chocolate roughly chopped (about 2 squares)
  • 2 tbsp coconut yoghurt to serve
  • 2 tsp pumpkin seeds to serve

Instructions

  • Preheat the oven to 180°C (350°F). Grease a 20cm x 12cm (8-inch x 5-inch) ceramic baking dish with coconut oil.
  • Place the oats, quinoa flakes, 40g of the almonds and cacao powder in a medium bowl and mix to combine. Place the eggs, oat milk, honey and orange extract in a jug and whisk to combine. Pour into the oat mixture and mix well.
  • Transfer to the prepared dish, sprinkle with the orange zest, chocolate and remaining 2 tablespoons of almonds and bake for 20 minutes, or until just set and golden brown.
  • Spoon into serving bowls and top with extra milk. Add a dollop of coconut yoghurt and sprinkle with orange zest and pumpkins seeds to serve.
