Mediterranean Greek salad

Ingredients

  • 1 large cucumber diced
  • 300 g vine-ripened cherry tomatoes halved
  • 1 green pepper diced
  • 1 small red onion thinly sliced
  • 200 g kalamata olives halved
  • 100 g feta cheese crumbled (omit if dairy-free)
  • Sea salt and cracked black pepper

For the Greek dressing

  • 80 ml red wine vinegar
  • Juice of 1 lemon
  • 1 tsp Dijon mustard
  • 2 garlic cloves crushed
  • ½ tsp dried oregano
  • ¼ tsp sea salt
  • Pinch of cracked black pepper
  • 125 ml extra virgin olive oil

Instructions

  • Place the cucumber, tomatoes, pepper, onion, olives, feta, salt and pepper in a large bowl and toss gently to combine.
  • To make the dressing, place the vinegar, lemon juice, mustard, garlic, oregano, salt and pepper in a small jug and whisk to combine. Slowly add the olive oil while whisking vigorously to combine. Drizzle over the salad and toss gently to combine.
