- 1 large cucumber diced
- 300 g vine-ripened cherry tomatoes halved
- 1 green pepper diced
- 1 small red onion thinly sliced
- 200 g kalamata olives halved
- 100 g feta cheese crumbled (omit if dairy-free)
- Sea salt and cracked black pepper
For the Greek dressing
- 80 ml red wine vinegar
- Juice of 1 lemon
- 1 tsp Dijon mustard
- 2 garlic cloves crushed
- ½ tsp dried oregano
- ¼ tsp sea salt
- Pinch of cracked black pepper
- 125 ml extra virgin olive oil
Place the cucumber, tomatoes, pepper, onion, olives, feta, salt and pepper in a large bowl and toss gently to combine.
To make the dressing, place the vinegar, lemon juice, mustard, garlic, oregano, salt and pepper in a small jug and whisk to combine. Slowly add the olive oil while whisking vigorously to combine. Drizzle over the salad and toss gently to combine.
